Summer Salad Loving

Summer is synonymous with salads. I can’t get enough of them. I am loving even more that they are changing weekly, inspired by what’s ready to harvest from the garden.
This week’s delight was a kale and romaine salad with chives and green onions for the base -picked from our garden. I topped it with cool cucumber, crunchy red pepper, sweet pineapple, crumbled goat cheese and pumpkin seeds for crunch. Finally, I drizzled it with a homemade dressing made of balsamic vinegar, olive oil, Dijon mustard and pure maple syrup.
The taste was out of this world. I savoured it outside in my back garden. I swear I could taste the love and nurturing and hours of tending to the garden that went into it.
Next week’s menu is looking like peas and green beans to start. What to do with those two ingredients is limitless. Oh the wealth of creativity that comes when the garden is plentiful!
